Ingredients
  

  • - 4 boneless skinless chicken breasts
  • - Salt and pepper to taste
  • - 1 tsp smoked paprika
  • - 1 tbsp olive oil
  • - 2 tbsp unsalted butter
  • - 3 cloves garlic minced
  • - 1 cup mushrooms finely chopped
  • - 1 tsp Italian seasoning
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - 1 cup shredded mozzarella
  • - ¼ cup grated Parmesan
  • - 1 tbsp chopped fresh parsley optional

Instructions
 

  • Slice pockets into the chicken breasts and season with salt, pepper, and paprika.
  • In a skillet, melt butter, add garlic and mushrooms, cook until browned.
  • Mix in cheese, then stuff mixture into chicken breasts and secure with toothpicks.
  • Sear chicken in oil on both sides, then bake at 375°F for 15–18 minutes.

  • Great served with roasted vegetables, mashed cauliflower, or a simple garden salad.
  • To prep ahead, stuff the chicken and refrigerate for up to 24 hours before baking.
