Ingredients
  

  • 2 large eggs
  • - 1 cup granulated sugar
  • - 1/2 cup unsalted butter melted
  • - 1/4 cup all-purpose flour
  • - 1/4 tsp salt
  • - 1/4 cup fresh lemon juice
  • - 1 tbsp lemon zest
  • - 1 cup whole milk
  • - 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  • Blend all ingredients until smooth.
  • Pour batter into muffin cups, 3/4 full.
  • Bake for 30–35 minutes until golden and set.
  • Cool 10 minutes, then chill for 1 hour before serving.

Notes

Use fresh lemon juice for best flavor. Chill before serving. Great for parties or gifting.
