- - 1 lb lean ground beef
- - 1 tbsp olive oil
- - 1 small red onion thinly sliced
- - 3 garlic cloves minced
- - 1 red bell pepper sliced
- - 1 yellow bell pepper sliced
- - 1 cup cherry tomatoes halved
- - 1/4 cup kalamata olives sliced
- - 1 tsp dried oregano
- - 1/2 tsp ground cumin
- - 1/4 tsp crushed red pepper flakes optional
- - Salt and pepper to taste
- - 2 tbsp fresh parsley chopped
- - Juice of 1/2 lemon
Heat olive oil in a large skillet over medium heat. Add onion and sauté 2–3 minutes.
Add garlic, stir until fragrant.
Add ground beef. Brown until cooked through.
Stir in peppers, tomatoes, olives, and spices. Cook 5–6 minutes.
Remove from heat. Stir in parsley and lemon juice.
